Lychee, banana and coconut sago pudding

To make:

In a pot boil 3 cups of water and 1 cup of sago for 10 minutes. Stir regularly so it doesn’t burn.

In a large casserole pot put:

  • Cooked sago
  • 1 tin of coconut cream + the equal amount of water
  • 3 cups of milk
  • 2 tbsps of sugar or honey
  • 1 tin of lychees
  • 2 large bananas sliced

bake in the oven on 160 degrees for about an hour. Stir regularly. Should be a thick consistency.

You can change the flavour and add any frozen berry, grated or sliced apple or pear, cinnamon sticks, aniseed, vanilla essence, tinned or fresh peaches etc!
