Caramelised Onion jam

We use this as a topping on pizza or sandwiches or spooned on top of mashed potato or as a dip for vegetable wedges or in stuffed potatoes or just spooned straight in.

It looks better with red onions (which I didn’t have) and balsamic vinegar makes it look a nice dark brown (also didn’t have, I used ACV instead). And it’s easier to eat if you chop the onion really thinly (which I didn’t do on account of being a lazy arse)

To make!
In a pot, cook on low heat for about an hour, or until onions cooked and kinda jam like:
4 to 5 red onions very finely sliced – brown onions work just as well but are not as pretty
Lots of fresh garlic grated or diced finely
30 grams of butter
2 tbsp olive oil
½ cup water
1 tsp balsamic vinegar
Salt, pepper and chilli powder
1 tsp dark brown sugar

Time in the kitchen: 5 minutes prep time plus cook time ☺️
