Chicken and Leek Soup

To make:

Put a whole chicken in the slow cooker.

Add 1/4 tsp salt, 1 tsp vinegar, pepper and 1- 2 litres of water.

Allow to cook for 8+ hours (perfect for banging in the morning and having it ready by the time you get home from work/school etc.)

When cooked, remove the bones from the meat. Add the meat back into the water/broth mix.

Add vegetables of your choice: I used:

1/2 leek chopped finely,

6 carrots diced

1 bunch of kale sliced finely

lots of garlic diced

3 sticks of celery diced

3 courgettes diced

salt to taste, 2 tsps oregano, 2 tsps smoked paprika, Chilli, 1 tsp dried mustard, 3 tsps salt free lemon pepper

20 grams butter

Allow to cook in the slow cooker for 1 hour or until vegetables are soft. If you want to speed up the cooking process. Put ingredients into a pot and boil on the stove for 15 to 20 minutes.

Makes enough for 10+ meals.
