
Eggplant chips!
Slice eggplant into wedges,
Dip wedges in egg (lightly beaten)
Dip in mix of:
3 tbsp corn flour,
1 tsp smoked paprika
1 tsp oregano
Salt, pepper and chilli to taste
3 tbsp grated parmesan (optional)
Pan fry and serve immediately 🤗
