Berry and Coconut Jelly

To make:

Put 3 tbsps gelatine in 1/4 cup water, mix and sit for ten minutes.

In a pot mix well and bring to the boil:

1 tin of coconut cream and the gelatine mixture – mix well then add:

500 grams of frozen berries of your choice

Bring to the boil, stir well so it doesn’t catch and burn on the bottom.

Allow to boil for around 5 minutes.

Pour in silicone (so can easily flip out) cake, loaf or slice tins.

Set in refrigerator.

Makes 2 medium sized jellies.

Time in the kitchen: 10 minutes plus set time (2 to 4 hours)
