Honey Sweetened Marshmallow

These marshmallows are sweetened with honey and have no corn syrup or refined sugar.

To make:

Step One: Pour flour into a baking dish. Use the back of the spoon to make egg shapes. make sure the flour is as smooth as possible. When you are finished, you can sieve the flour to get rid of any marshmallow bits and reuse.

Step Two: In a large bowl put 1/2 cup water and 7 teaspoons of gelatine. Mix. Allow to sit for 10 minutes.

Step Three: In a pot put 1/2 cup of fruit tea (I used rose, but any will do) and 2/3 cup honey. bring to the boil and allow to boil for at least one minute.

Step Four: Pour the honey mixture over the gelatine mixture and whizz with a cake mixer. You will need to whizz for 12 minutes on high.

Step Five: After about 10 minutes of mixing add salt and your flavour, either essence (eg vanilla, peppermint, orange etc or freeze dried fruit powders.

Step Six: When light and fluffy, spoon into your flour molds. Coat in flour and dust them off when set.

Step Seven: (optional) coat them in melted chocolate!
