Seed Crackers

I made a massive batch of crackers and these guys taste amazing!

These crackers are AMAZING!
They are filling, delicious, nutritious and reasonably easy to make. You can add different herbs and spices to give them a different flavour twist.

I’ve tried adding:
nutritional yeast
smoked paprika
coriander seeds
fennel seeds

To make – in a large bowl put:
1 cup of corn flour
1 cup pumpkin seeds
1 cup sunflower seeds
1/2 cup sesame seeds
3 tbsps nutritional yeast
3 tbsps psyilium husk
salt and pepper,
1 tbsp olive oil
1/2 cup linseeds

Mix well. Add 1 cup water

Stir until well mixed. Mixture should be thick but easily spreadable.

Spread thinly onto a silicone baking tray. Bake on 160 degrees for around 30 minutes. Flip over and keep in oven until crunchy.

Keeps in an air tight container for around 3 weeks.

Cooking tips:

Spread the mixture very thinly, you only want them a couple of millimeters thick

This recipe makes enough to spread over two trays.
If you cook them separately, the mixture will thicken and be difficult to spread. Add extra water, mix well and then spread it over the tray.

To spread evenly and thinly on the tray, have a cup of water beside you and use it to dip your hands in. I use my hands to spread the mixture on the tray and if hands are wet the mixture spreads easily.

You can tell it’s cooked when it starts to curl and lift off the tray.

I break them into pieces when cool and place in an air tight container.
