Avocado mousse cake.
Gf, df, egg free, vegan
So delicious, Miss 11 took a greedy bite before I could take a pic 😂
To make:
In a food processor whizz until smooth:
1 tin of coconut cream
2 ripe avocados
1 banana
1 cup of raisins
3 tbsp cocoa
1 tsp of vanilla essence
â…“ cup coconut oil
1 cup cashews
Pour into a 20cm cake tin. Set in the freezer for a few hours until firm, but still easy to slice. Serve!
This is delicious as a mousse (not frozen) or frozen and firm in a slice 😋
