In a pot melt:
75 grams of butter
2 over ripe bananas, mashed
1 tsp vanilla essence
2 tbsp of sugar or honey
In a whizzer/bullet/food processor whizz til smoothish:
1 cup almonds
3/4 cup walnuts
Add to the banana mixture:
1/4 cup gf flour (I used the edmonds mix)
2 tsps baking powder
Put in a silicone bake tin or similar.
bake in the oven on 180 degrees for 30 to 35 minutes or until cooked.
You can tell its cooked as it will bounce back when touched, if you stick a knife in it, the knife will come out clean and the cake will start to pull away from the edges of the tin.
Makes 1 medium to small sized cake.
Can be made into muffins instead, just reduce the cook time.
We topped with melted chocolate
