GF Fruit Bread

It took 5 goes but I’ve finally nailed it!

Fruit Bread – Hot Cross Bun Style!

Gf, wheat free, df, nut free, egg free and you don’t need a bread maker!

To make:
In a bowl put:
1/2 cup Chickpea flour
1 cup Psyillium husk
1/2 cup Chia seeds
1 cup Sesame seeds
1 cup of gf Bread mix
1/2 cup Pumpkin seeds (ground up)
1/2 cup Sunflower seeds (ground up)
3 tsps of baking powder
2 Tb Dried Activated yeast
1 1/2 Tbsp brown sugar (for the yeast to ferment)
1/4 tsp salt
2 1/2 tsps each of dried and ground cinnamon, ginger, nutmeg and cloves

Mix well.

Add:
2 1/2 cups water
2 cups of precooked polenta (warm – not too hot or you will kill the yeast) To cook the polenta boil in water until thick and custard like
2 1/2 cups raisins

Mix well.

Cover bowl with gladwrap or similar. Leave in a warm spot for an hour or two, so the yeast can rise.

Bake in the oven on 180 degrees Celsius for 40 to 50 minutes or until cooked.

Lasts 7 to 10 days in the fridge.
Freezes well.
