Sausage Pie loaded with veges and all ready to be topped with mashed potato and banged in the oven.
In a large casserole dish put in any mix veges of your choice with:
500 grams of sausage meat
2 to 3 onions chopped or grated
Apples peeled and chopped or grated
2 – 4 tbsp of curry powder (amounts depend on how strong you like it, for a more mild flavour use 2, for a stronger flavour use 4)
¼ cup of pasta sauce
2 tbsp olive oil
Mix well, so olive oil and spices are all mixed over the sausage and veggies.
Make mashed potato (use between 6-8 medium sized potatoes).
You can add cooked cauliflower and/or cooked lima beans to the potato mash (mash it in) and/or stir through frozen peas to the potato mash, after you have mashed it. Great way to increase the veggies!
Spoon potato mash on top of the sausage mixture.
Put grated cheese on top of the potato.
This goes in the oven on about 100 degrees for 2 hours (so you can leave it and go out!) or on 180 degrees Celsius for 45 minutes to an hour, or until cooked.
This recipe makes enough for two dinners so you can save yourself having to cook the next day! 😄
