Eggplant vegetarian 'mince'

To make:

In a fry pan put:

lots of garlic diced

2 onions diced

olive oil

Lightly pan fry until onion is translucent


1 eggplant grated

2 courgettes grated

3 cups of beans of your choice

2 tsps of Italian mix herbs

1 tsps of smoked paprika

2 tsps of nutritional yeast

4 carrots grated

1 jar of passata sauce or two tins of plain tomatoes

salt and pepper and chili to taste

Simmer until veggies soft and sauce is thick.

Serve on its own or with some form of starchy carb and cheese or cream cheese or vegan alternative (we had pasta and cheese)
