Homemade Baked Beans.
This is super easy and cheap to make. The whole batch cost about $8.00 to make and easily makes the equivalent of 7 1/2 tins.
This recipe is a cheaper and healthier option then a tin of baked beans, which contain around 8 tsps of added sugar per tin!
Cook 3 cups of dried beans and cook for 20 to 30 minutes in water.
In a slow cooker put:
3 cups of cooked beans,
3 peeled and chopped apple,
2-3 grated carrots,
2 diced onions,
2 cups cauliflower rice,
as many garlic cloves as you can be bothered peeling and cutting,
3 rashes of bacon, chopped and rind cut off (make it vegan, omit and add savoury yeast flakes)
300 ml of cooked tomatoes (I used Ceres tomato puree as it’s only tomatoes and salt),
1/3 cup lemon juice or lime juice or a bottle of beer or 2 capfuls of vinegar,
1 tsp of each: smoked paprika, dry mustard, oregano, cracked pepper,
1/4 tsp salt or a stock cube.
Leave to cook for 4 to 5 hours until all soft. Stir occasionally.
Time in the kitchen: 15 minutes prep time.
Keeps in the fridge for 4 to 5 days and freezes well.
