Raw Carrot cake

To make:

In a whizzer, whizz til smoothish:

1 1/2 cups raisins

2 cups walnuts

1 tsp of mixed spice or cinnamon

1tsp coconut oil

Once whizzed add 1 1/2 cups grated carrot. Whizz gently, til just mixed.

Roll mixture into pattys.

Spread cream cheese icing on the top. Layer as desired.

Sprinkle the top with poppy seeds to decorate

To make the icing:

Whizz til smooth:

1/2 tub cream cheese

50 ml cream

2 tsps of lemon juice

1 tsp honey or brown sugar
