Thai Flavoured Chickpea meatless balls

We are trying to eat more legumes, mainly because they are cheap, but also healthy!

These have a very strong flavour you wouldn’t even know they’re made from leftover lentils and chickpeas ☺

How to make:
With a food processor or whizz stick Whizz:

2 cups of fresh coriander
3 cups legumes (we used lentils and chickpeas)
2 tbsp of lime juice
3 garlic cloves
1 tsp of ground ginger
1 tsp fish sauce
1 tsp dried lemongrass
Pinch of chilli

When whizzed well add:
Diced spring onion
Diced red capsicum


Bake in the oven on 180 degrees for 25 to 30 minutes

Time in the kitchen: 15 minutes prep time plus cook time ☺
