Quick Vegan Curry

Quick Curry.

To make, in a hot fry pan put:

1 tbsp of oliveoil

1 tsp of each: paprika, cumin, ginger, turmeric, coriander and

1/2 tsp chili flakes

1/3 tsp herb salt

3-4 cups of precooked or tinned legumes (I used Moong dhal)

1 bunch of asparagus, washed and chopped (or any other seasonal veggies of your choice)

Stir well so beans and veges covered in spices.

When heated through, add 3 chopped tomatoes.

Cook for a further 2 to 3 minutes.


Time in the kitchen: 10 minutes 😌

Serves 4 – reduce or increase the amounts of veggies and beans if cooking for less or more people.
