Roasted Lima Beans
These taste amazing and are a great alternative to chips!
To make:
Boil up large Lima beans for about 20 minutes or until soft, but not mushy.
In a roasting tray mix cooked beans with:
salt,
pepper
1 tsp of sumac (a lemony flavoured spice)
1 to 2 tsps of olive oil
Mix so beans are well covered in spice and oil
Bake in the oven on 220 degrees for 25 to 30 minutes or until crispy on the outside, soft on the inside.
Serve with salad or on its own as a snack
