Raspberry pikelets and coffee makes a Friday morning perfect!
To make the pikelets:
In a medium sized bowl put
2 mashed bananas
1 tsp of vanilla essence
3 eggs
Mix well
In a separate bowl mix:
1 ½ cups of gf flour
2 cups of frozen raspberries
2 tsps of baking powder
Make sure the raspberries are in individual pieces and that they are coated in flour.
Add the flour mix to the banana mix.
Stir well.
Add ¼ to ½ cup milk to get a good batter consistency
Spoon small amounts onto a hot pan and
Pan fry in a wee bit of oil until cooked on both sides
Time in the kitchen: around 20 minutes ☺️
