Passionfruit Chia 'Jam'

This ‘jam’ is perfect on toast or used as a coulis on desert, ice cream, yoghurt or cake. or to top on your breakfast cereal.

It does not contain any or much sugar, so best used within a few days.

To make:

In a pot bring to the boil:

2 cups of passionfruit pulp fresh or frozen

50 ml of water

1 tsp honey (optional)

3 tbsp chia seeds

Mix well. Heat for 5 minutes

When cool, the jam will set and should be quite thick. If not thick enough, add more chia seeds, stir through and allow to set for another 5 to 10 minutes.
