Mini Orange Sponge with orange glaze

To make :
Boil half an orange (rind and flesh) until soft

Whizz til smooth:
The boiled ½ orange
50 grams of butter
2 egg yolks
2 tbsp sugar or honey
1 ¼ cups of LSA

When whizzed add:
2 tsps baking powder
2 egg whites beaten til thick
Stir in gently to orange mixture

Spoon mixture into individual muffin tins or similar.
Bake in the oven on 180 degrees for 20 to 25 minutes or until cooked.

To make the glaze:
In a pot on the stove heat until bubbling:
30 grams of butter
1 tbsp of honey
Juice of 1 orange + rind

While still hot, pour glaze on top of cooked mini sponges. Serve.
Eat within 2 days.
