Blueberry Pikelets!

The perfect lazy Sunday morning breakfast

Blueberry Pikelets!

In a bowl put:
1 over ripe mashed banana,
2 eggs
1 tsp vanilla essence.

Mix well.

Add:
1/2 cup buckwheat flour,
1/2 cup gf flour mix,
2 tsps of baking powder
1 cup blueberries.

Mix.
Add 1/4 cup milk.

Mix gently.

Cook in oiled fry pan (I used coconut oil) on medium heat. Flip when bubbling.

Serve with fruit and yoghurt.

Time in the kitchen: 15 minutes

Top tip: When cooking or baking with frozen fruit, cover them in flour first, before putting in the main mixture. This helps them keep there shape and not go soggy!
