Pictured is Eggplant Lasagne, which is a variation on the courgette pizza. Simply switch courgette for eggplant and layer then up: eggplant slices, toppings and repeat 2 to 3 times and top with cheese.
We have more courgette/marrow than we know what to do with. So for lunch yesterday, I sliced courgettes, put on pizza toppings (tomato paste, fresh basil and parsley, sun dried tomatoes, cheese and a wee bit of bacon – but anything goes, really) and popped in the oven for 20 minutes.
Time in the kitchen: 15 minutes.
