Scones

Saturday Lunch in the sun!

I upped the protein in these cheese and bacon scones by subbing out some of the flour for a tin of chickpeas! Huge hit with the kiddies so they’re a win!

Chickpea scone with avocado smash and fresh chilli

To make the scones:

In a food processor whizz to a fine crumb
1 tin of chickpeas drained
50 grams of butter
50 grams of cheese
3 bacon rashers with the rind off
½ cup of gf flour
Garlic

Add:
2 tsps of baking powder
⅓ cup milk
Mix until combined

Roll into balls
Cover with flour
Bake in the oven for 15 to 20 minutes or until golden brown

Serve hot with mashed avo in lemon juice

Time in the kitchen: 15 minutes ☺️😍

Variations:

Add fresh herbs, such as parsley or basil

take out the cheese and bacon and add cinnamon and dates or raisins and coconut
