PURPLE EGGS! Juice a beetroot. Hard boil eggs, cool, then peel. Soak peeled eggs in beetroot juice. If you want to keep the beetroot juice, put some sauerkraut juice in. This will add some gut healthy bacteria to the eggs and the beetroot juice will keep for months in the fridge.
Beetroot juice alternative: if you don’t have a juicer simply boil up some beetroot and use the cooking water to soak the eggs in. Add vinegar to prevent spoilage.
