Slice courgette thinly (I used a mandolin)
Fill with something yummy, I used feta cheese, fresh basil and sun dried tomato but anything goes really, salmon, cream cheese, mushroom, olives, cherry tomato, hummus, sauerkraut, pesto….
Roll and pin with toothpick or bamboo skewer.
Time in the kitchen 10 minutes.
Great for an afternoon tea with friends
