Sneak some veges in your breakfast!
Beetroot and raspberry coulis with muesli and yoghurt.
I saw a recipe last week for something similar and when I came to make it, couldn’t find the link. So I made my own version.
To make the coulis:
Peel and cook 1 medium beetroot until soft. Put beetroot and cooking water in whizzer with 1/2 squeezed lemon juice and 2 cups raspberries. Whizz til smooth. Add 3 tbsp chia seeds. Whizz. Allow to set.
To make the muesli:
In the whizzer put: nuts, seeds, oats, buckwheat groats, coconut etc of your choice and whizz so roughly chopped. Put in baking tray for about 20 minutes, stirring so cooked evenly, until nicely roasted.
Layer coulis, muesli and yoghurt to serve.
Time in the kitchen: 10 minutes prep time plus cook time 😊
