Slow cooked rice and amaranth porridge. Served with stewed pears and walnuts.
Put rice and amaranth grains in the slow cooker with milk. Cook for 2-3 hours on low.
Alternative: replace the amaranth with polenta. Just allow the rice to cook for an hour first, then add polenta.
Rule of thumb is 1 cup grains to 2.5 cups liquid.
