Date cake with caramel sauce.
This cake has no refined sugar, but contains honey and plenty of dates, so is best eaten in small pieces and shared with family and friends 😊
To make the cake:
Melt 100 grams of butter or make it dairy free and use coconut oil instead.
In a bowl soak for 5 minutes 1 cup dates in 1 cup boiling water. Whizz.
Add 2 eggs and date paste to butter. Mix. Add 1.5 cups flour (I used gf bread mix) and 2 tsps of baking powder. Mix.
Bake in oven for 30 to 35 minutes on 160 or until cooked.
To make the caramel:
Melt butter and 2 tbsp honey. Bring to a rolling boil. Add 1/2 can coconut cream and 2 tbsp date paste. Stir well. Bring to a rolling boil. Pour hot on cake. Serve.
Time in the kitchen: 15 to 20 minutes 😊
